Sweet Treats with Mrs. Ruth's

Oats + Honey + Almond Butter + Jam = Jammy Bars

So yummy & made with the good stuff!

3 Ingredient PB & J Fudge

Ingredients

  • 1 can vanilla frosting
  • 16 oz peanut butter (your preference for crunchy or smooth)
  • 1/2 cup Mrs. Ruth's Jams (flavor of your choice)

Directions

Step 1: Combine 1 can frosting, 16 oz peanut butter in glass bowl.

Step 2:  Do not stir, 

Step 3: Microwave 1 min. 

Step 4:  Stir until blended. Pour into pan.

Step 5:  Swirl with your favorite Mrs. Ruth's Jams. 

Step 6: Refrigerate to cool, cut & serve.

Step 7:  Enjoy!

Very Berry Tarts

Recipe

1 refrigerated dough pie crust

3 tablespoons almond butter (may use more to taste)

1/3 cup Mrs. Ruth’s Very Berry Jam

1/4 cup chocolate chips (or may use white chocolate chips)

Preheat oven to 400 degrees


Step 1:  Unroll pie crust on to parchment paper.    If thinner crust is desired, roll dough with rolling pin.

Step 2:  Use cookie/biscuit cutter to cut even-number round crusts (leftover dough may be combined and rolled again).  Suggest 2 1/2” or 3” diameter cutter.  Place rounds on parchment paper on cookie sheet.

Step 3:  Place 1 teaspoon (or more to taste) of Big Spoon Roasters almond butter on 1/2 of the rounds

Step 4:  Spoon 1 teaspoon of Mrs. Ruth’s Balsamic Strawberry jam on top of the almond butter

Step 5:  Place 3-4 chocolate chips on top of the jam & almond butter

Step 6:  Cover with dough round & press with fingers or fork to seal edges.   Slightly prick top of round with fork.

Step 7:   Bake at 400 degrees for 12-15 min until golden brown (check periodically as oven temps may vary)

Step 8:   Enjoy while warm and gooey!  Yummy!

Mrs. Ruth's Jams Candied Bacon

  • Cook 1/2 pound bacon until almost crisp (microwave, skillet or oven)
  • Place bacon on paper towels to remove grease.  Pat to dry
  • Soften 1/3 cup Mrs. Ruth's Jalapeño Fig Jam (more to taste)
  • Spread softened with pastry brush over drained bacon.  Place on parchment covered cookie sheet
  • Using Broil setting of oven, brown candied bacon, watching closely as it can brown quickly

Mrs. Ruth's Jams Candied Bacon

  • 1/2 cup butter - melted
  • 2 1/2 cups flour
  • 4 tsps baking powder (or 3 tsp w/self-rising flour)
  • 1 tsp salt
  • 1 3/4 cup buttermilk
  • Pour melted butter into 8" pan. Mix remaining ingredients. Press dough into dish on top of butter.  Drag knife through dough to make 9 squares.  Bake in 450 degree oven 20-25 min.
  • Spread with Mrs. Ruth's Jams - and enjoy!

Cheese-y Tomatoes with Bacon & Mrs. Ruth's Jams

  • Prepare frozen meatballs according to package instructions and add 1/2 cup Mrs. Ruth's Hot Momma Marmalade 
  • When meatballs are done,  cover with additional 1/4 cup marmalade.  
  • Serve with bowl of Mrs.  Ruth's Hot Momma Marmalade for dipping
  • Will taste like you fussed, but only you will know how easy!

Cheese-y Tomatoes with Bacon & Mrs. Ruth's Jams

  • Combine:
  • 8 ounces freshly grated Sharp cheddar
  • 1/3 cup mayonnaise
  • 2 dashes cayenne pepper (to taste)
  • 1/4 cup Mrs. Ruth's Jams Pineapple Jalapeno (or Cranberry Jalapeno)
  • Mix until blended
  • Serve on split cherry tomatoes ( or toasted baguettes)
  • Sprinkle with bacon crumbles

Mrs. Ruth's Jams Fruit Pie Pinwheels

  • 2 Tablespoons any flavor of Mrs. Ruth's jams
  • 1/4 cup bottled Balsamic Vinaigrette dressing 
  • Mix well with whisk.  Dress salads or refrigerate for later
  • Yummy on fresh spinach and fruit salad - top with sliced almonds, if desired!

Mrs. Ruth's Jams Fruit Pie Pinwheels

  • Thaw sheet of frozen puff pastry on parchment paper
  • Roll out pastry to form a rectangle
  • Spread with your favorite Mrs. Ruth's Jams
  • Roll up from short side of pastry in jelly roll fashion
  • Slice into 1/2 inch slices with serrated knife
  • Bake at 350 degrees on parchment paper lined cookie sheet for 20 minutes or until golden brown
  • Serve warm - delicious!
